Equipment

  • Blender
  • Mixing Bowl

Ingredients

  • 1 1/4 cup almond milk or any milk you wish
  • 2/3 cup Stonyfield Plain 0% Fat Yogurt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose unbleached, white whole wheat flour or gluten-free flour mix
  • 1 tablespoon + 2 teaspoons baking powder
  • 1/4 teaspoon kosher salt
  • cooking spray

Instructions

  • Start by gathering all your ingredients on the counter. It makes the process smoother. In a blender, combine the ingredients, starting with the liquid. Pour in the almond milk, followed by the yogurt, eggs, and vanilla extract. Blend these for about 30 to 60 seconds until well mixed and smooth.
  • Add the dry ingredients to the blender. Toss in the all-purpose flour, baking powder, and kosher salt. Blend again until everything is just combined. Don’t overmix! You want a smooth batter that’s ready to go.
  • Now, it’s time to heat up your waffle iron. Preheat it to medium heat, which is usually around number three on most models. Let it warm up while you finish preparing your batter.
  • Once the waffle iron is hot, spray it generously with cooking spray. This is crucial for ensuring your waffles come out perfectly without sticking.
  • Pour 1/2 cup of the batter into the center of the preheated waffle iron. Be sure not to overfill; the batter will spread out as it cooks.
  • Close the waffle iron and let it cook until the waffles are golden brown and slightly crisp on the edges. This should take about three to four minutes. Keep an eye on them to avoid burning!
  • When the waffles are ready, carefully open the waffle iron and use a fork or tongs to remove them. Place them on a wire rack to keep them crispy while you repeat the process with the remaining batter.
  • If you have leftover batter, you can refrigerate it for later. Just make sure to cover it well. These waffles are great for meal prep!
  • Serve the waffles warm with your favorite toppings. Fresh fruits, maple syrup, or a dollop of more yogurt work wonderfully!
