Instructions
Step 1: Rinse all vegetables under cold water. Cut the avocado, bell pepper, and cucumber into thin slices or sticks. Grate the carrot and set all vegetables aside in a large bowl.
Step 2: In a medium bowl, mix the cottage cheese with the plain yogurt, lemon juice, salt, pepper, and spices of your choice. Stir until smooth.
Step 3: Heat the tortillas in a frying pan over low heat for 1-2 minutes on each side to make them more pliable.
Step 4: Spread a generous portion of the cottage cheese mixture in the center of each tortilla. Add slices of avocado, bell pepper strips, cucumber sticks, lettuce, and grated carrot. Feel free to add fresh herbs for more flavor.
Step 5: Fold the bottom of the tortilla over the filling, then fold in the sides and roll tightly to create a closed wrap. Repeat with the remaining tortillas.
Step 6: Cut the wraps in half for a nicer presentation. They can be enjoyed immediately or stored in the refrigerator for up to 2 hours before serving.
