- 1 lb lean ground beef
- 1 small onion
- 1 stalk celery
- 1 small green pepper
- 1 tablespoon cooking oil
- 10 oz Rotel tomatoes with green chilies
- 28 oz stewed tomatoes
- 14 oz kidney beans
- 14 oz pinto beans
- 14 oz tomato sauce
- 1.25 oz dry chili seasoning
- 1 tablespoon white vinegar
In a large stock pot, add the ground beef, diced onion, diced celery, chopped green pepper, and cooking oil. Cook over medium-high heat until the hamburger is browned, about 8 to 10 minutes.
Season generously with salt and black pepper to enhance the flavors. If there's excess grease, drain it to keep the chili from being overly greasy.
Once the beef is browned, add the Rotel tomatoes, stewed tomatoes, undrained kidney beans, undrained pinto beans, tomato sauce, and the dry chili seasoning. Stir everything together until well combined.
Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to a simmer and cover the pot. Let it simmer for 1 hour, stirring occasionally.
After 1 hour, stir in the white vinegar. This ingredient brightens the chili and adds a nice tang.
