  • 25 pieces Oreo cookies finely crushed
  • 5 tablespoons unsalted butter melted
  • 8 ounces chewy caramels unwrapped
  • 1 ¼ cups heavy whipping cream divided
  • ½ teaspoon kosher Salt
  • 1 cup chopped pecans toasted
  • 2 cups dark or semi-sweet chocolate chips

  • Begin by spraying the bottom and sides of a 9-inch springform pan with nonstick cooking spray. This will prevent your pie from sticking and make it easier to remove once set.
  • In a medium bowl, stir together the finely crushed Oreo cookies and the melted butter. Use a fork to combine them well until the mixture resembles wet sand.
  • Press the cookie mixture firmly into the bottom and about 1 inch up the sides of the pan. This crust provides the delicious first layer of Turtle Pie. Chill it in the refrigerator while you prepare the filling.
  • In a medium bowl, combine the chewy caramels and 4 tablespoons of heavy whipping cream. Heat this mixture in the microwave on high for 2 to 3 minutes, stirring every 30 seconds. You want it to be smooth and creamy.
  • Once smooth, stir in the kosher salt and the chopped pecans. Pour this caramel mixture evenly into the chilled crust and spread it out with a spatula.
  • In a large bowl, place the chocolate chips and the remaining heavy whipping cream. Heat this mixture in the microwave for about 1 minute and 15 seconds. Stir until the chocolate has melted completely and the mixture is smooth.
  • Spread the chocolate mixture evenly over the caramel layer, making sure it’s well covered. The contrasting layers create an impressive visual appeal.
  • Sprinkle coarse sea salt generously on top for that perfect finish. It adds a delightful hint of saltiness that enhances the overall flavor.
  • Now, chill the pie in the refrigerator for about 2 hours to set. Patience is key as this allows all the flavors to meld beautifully.
