- ¼ cup unsalted butter half of one stick, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup strawberry cake mix this is about 9 ounces, or half of an 18.25 ounce box
- ¼ cup cream cheese softened
- 2 to 4 cups confectioners’ sugar
1. Preheat your oven to 350°F (175°C).
2. In a large mixing bowl, combine the softened butter, egg, and vanilla extract. Use a hand mixer or stir by hand until well combined.
3. Add the strawberry cake mix and stir until fully incorporated.
4. If the dough feels too wet, add more cake mix, one tablespoon at a time.
5. If the dough appears too dry, gently add a tablespoon or two of water to help it bind.
6. Chill the dough in the freezer for 15 to 20 minutes.
7. Scoop about one tablespoon of dough and roll it into a ball. Place on a lined baking sheet.
8. Bake at 350°F for 8 to 10 minutes.
9. While the cookies are baking, beat together the cream cheese and butter for frosting.
10. Once cooled, frost the cookies generously.
