Equipment

  • Blender
  • Saucepan
  • Cutting Board

Ingredients

  • 3 cups unsweetened oat or coconut milk
  • 3 cups strawberries 24 large strawberries
  • 1 teaspoon vanilla extract
  • 1 tablespoon granulated sugar more for added sweetness
  • 1/4 teaspoon salt
  • 2 cups rolled oats
  • 1/4 cup cream if desired

Instructions

  • Start by rinsing the strawberries under cool running water. Gently cut off the stems and any white parts, ensuring you have only the juicy red fruit. This step enhances the flavor of your oatmeal, so make sure to choose ripe strawberries!
  • Next, place the rinsed strawberries in a blender. Add the unsweetened oat or coconut milk, leaving a handful of strawberries aside for topping later. Blend on high until the mixture is completely smooth and creamy, resembling a delightful strawberry milk.
  • Once blended, take the remaining strawberries and dice them into small pieces. These will be used as a fresh topping, adding a lovely texture contrast to your Strawberries and Cream Oatmeal.
  • In a large pot, pour the blended strawberry milk. This serves as the base for your oatmeal. Add in the vanilla extract, granulated sugar, salt, and the rolled oats. Stir everything together to combine the flavors.
  • Heat the pot over medium-high heat. As it warms up, keep an eye on the mixture, stirring occasionally. You'll notice it starting to bubble, at which point you should reduce the heat to medium. This will help the oats cook evenly without sticking.
  • Let the mixture simmer gently for about 5 to 6 minutes. Stir frequently to prevent clumping and to ensure that the oats absorb the strawberry milk. At this point, the oatmeal should thicken and become creamy, a sure sign that it’s almost ready!
  • Once the oatmeal reaches your desired thickness, remove it from the heat. The texture should be velvety and smooth, perfect for a comforting breakfast.
  • Transfer the oatmeal into individual serving bowls. Top each bowl with the diced strawberries you set aside earlier. If desired, drizzle some cream over the top for added richness.
  • Serve warm and enjoy your delicious Strawberries and Cream Oatmeal! Each spoonful is bound to bring a smile to your face, perfect for sharing or indulging solo.
  • Savor the flavors and remember to appreciate the wholesome ingredients that came together to create this lovely dish. It’s a great way to start your day!
