Ingredients
  

  • 2 medium ripe avocados pitted and peeled
  • 0.5 cup drained, canned white cannellini beans
  • 2 cloves garlic minced
  • 1 teaspoon minced jalapeño
  • 0.25 cup chopped fresh cilantro
  • 0.25 cup chopped fresh mint
  • 2 teaspoons freshly squeezed lime juice
  • 1 teaspoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon freshly ground black pepper

Instructions
 

  • Start by placing the avocados, cannellini beans, minced garlic, and jalapeño into a large mixing bowl. Use a fork to mash them together until you achieve a chunky yet creamy consistency. You want to see some texture, so don’t overdo it!
  • Once you’re satisfied with the mash, it’s time to fold in the fresh ingredients. Add the chopped cilantro, mint, lime juice, olive oil, salt, and black pepper to the bowl. Using a spatula, gently fold these ingredients into the mash, mixing until everything is evenly combined. The smell will be incredible!
  • Now comes the most challenging part: tasting! Give your dip a quick sample and adjust the seasoning if necessary. If you prefer more heat, you can add a bit more jalapeño or some additional salt.
  • Once you’re happy with the flavor, cover the bowl with plastic wrap or a lid. Place it in the refrigerator to chill for at least 30 minutes. This step allows the flavors to meld together beautifully.
  • When you’re ready to serve, remove the dip from the fridge. Give it a good stir before transferring it to a serving bowl. You want to make sure everything is nicely mixed again!
