  • 1.5 liters Water
  • 1 kg Whole Chicken or Chicken Pieces
  • 2 pieces Carrots, peeled and sliced
  • 1 stalk Celery, diced
  • 1 piece Onion, quartered
  • 2 cloves Garlic, crushed
  • 1 bouquet Bouquet Garni (thyme, parsley, bay leaf)
  • to taste Salt
  • to taste Pepper

Matzo Ball Ingredients

  • 150 grams Matzo Meal
  • 2 pieces Eggs
  • 60 ml Water
  • 1 tablespoon Olive Oil
  • 1 teaspoon Salt
  • to taste Pepper
  • 1 tablespoon Chopped Chives (optional) For added flavor

Instructions
 

  • Step 1: In a large pot, add the water and chicken. Bring to a boil over medium heat. Once boiling, skim off the foam that forms on the surface. Add the carrots, celery, onion, garlic, and bouquet garni. Season with salt and pepper to taste.
  • Step 2: Reduce heat to low and let simmer for about 1 hour. This allows the flavors to develop and the chicken to cook thoroughly. Once cooked, remove the chicken from the pot and let it cool. Strain the broth to remove the vegetables and impurities, then return it to the heat.
  • Step 3: In a mixing bowl, combine the matzo meal, eggs, water, olive oil, salt, and pepper. Mix well until a homogeneous dough forms. If desired, add chives for extra flavor. Let the mixture rest in the refrigerator for about 30 minutes.
  • Step 4: With slightly wet hands, form the mixture into balls the size of a walnut. Ensure they are not too compact so they remain light during cooking.
  • Step 5: Bring the broth back to a boil and reduce the heat to medium-low. Carefully add the matzo balls to the broth. Cover and cook for about 20 minutes. The balls will puff up and become light.
  • Step 6: While the matzo balls are cooking, debone the chicken and cut it into pieces. Add it back to the broth with the matzo balls. Let simmer for a few more minutes to heat everything through.
  • Step 7: Adjust the seasoning of the broth if necessary. Serve hot, garnished with fresh parsley or chives for a touch of color.
