  • 1 clove garlic finely chopped
  • 1 tablespoon extra virgin olive oil
  • 1 pound zucchini diced
  • 1 large tomato cored, seeded and diced
  • 1 green onion thinly sliced
  • 1 tablespoon minced fresh cilantro
  • 1 teaspoon minced pickled jalapeño
  • 1/2 cup crumbled queso blanco or queso fresco, cotija or feta
  • fresh lime juice to taste
  • salt to taste
  • freshly ground black pepper to taste

Instructions
 

  • 1. Start by heating the olive oil in a large skillet over medium heat. Add the garlic and cook for about one minute until it becomes fragrant and starts to sizzle. You want to keep an eye on it to make sure it doesn’t burn, as burnt garlic can turn the dish bitter.
  • 2. Next, toss in the diced zucchini. Allow it to cook for around three minutes, stirring occasionally. You're looking for it to soften slightly but still retain a bit of crunch. This gives the dish a lovely texture.
  • 3. Now it's time to add the diced tomato and sliced green onion. Cook everything together for another three minutes. At this stage, the tomato will release its juices, creating a beautiful sauce that coats the vegetables.
  • 4. Once the vegetables are perfectly tender, remove the skillet from heat. It's important to take it off the burner to maintain the fresh flavors. Stir in the cilantro, minced jalapeño, and a squeeze of fresh lime juice. This adds a fantastic brightness to the dish.
  • 5. Season with salt and pepper according to your taste. Make sure to mix it well so that every bite is seasoned perfectly.
