Ingredients
  

  • 1 lb large shrimp, peeled, deveined and tails removed
  • 1 Tbsp chili powder
  • 3/4 tsp cumin
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne, more or less depending on desired spiciness
  • 3/4 tsp oregano
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 3 Tbsp olive oil
  • 2 mangoes, small diced
  • 1/4 red onion, small diced
  • 1 jalapeño
  • 1/3 cup cilantro, freshly chopped
  • 1 lime, juice of
  • salt and pepper to taste
  • 6-8 tortillas

Instructions
 

  • Ensure your shrimp is completely thawed and patted dry. In a bowl, combine the thawed shrimp with 2 tablespoons of olive oil, chili powder, cumin, garlic powder, cayenne, oregano, salt, and pepper. Mix well to ensure every piece is evenly coated. This step is essential as it allows the flavors to meld together. Set the marinated shrimp aside while you prepare the salsa.
  • In a separate bowl, finely chop the red onion and jalapeño. Dice the mangoes into small cubes. Combine all these ingredients with the juice of one lime. Season with additional salt and pepper to taste. This fresh salsa will bring a burst of flavor to your tacos.
  • Heat a skillet over medium-high heat. Add the remaining olive oil to the hot skillet and watch it glisten. Carefully add the marinated shrimp to the skillet, ensuring they are in a single layer. Cook for about 3 minutes per side or until the shrimp becomes opaque and curls up tightly. This step is crucial; overcooking will make them rubbery, so keep an eye on them! Once cooked, transfer the shrimp to a clean plate.
  • Warm the tortillas in the skillet for about 30 seconds on each side or until pliable. Spoon the flavorful shrimp into each tortilla and generously top with the fresh mango salsa.
