Cut 12 ounces smoked sausage into ½-inch thick rounds.
Cut 1 pound baby potatoes into 1-inch pieces.
Cut 1 red bell pepper into 2-inch long sticks.
Heat 3 tablespoons olive oil in a large skillet over medium-high heat.
Add the potatoes to the skillet, seasoning with 1 teaspoon garlic powder, 1 teaspoon oregano, 1 teaspoon parsley, ½ teaspoon salt, and ½ teaspoon pepper.
Cook the potatoes, stirring frequently to evenly brown until tender, about 15 minutes. Remove the potatoes from the skillet and set aside.
To the skillet, add the sausage, 1 cup diced yellow onion, and red bell pepper.
Cook until the vegetables are tender, about 5 minutes.
Add the potatoes back to the skillet with the sausage, stir, and cook together for another couple of minutes.
Remove the skillet from heat and serve.
