Ingredients
  

  • 12 ounces smoked sausage
  • 1 pound baby potatoes
  • 1 red bell pepper
  • 1 cup diced yellow onion about ½ medium onion
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon oregano
  • 1 teaspoon parsley
  • ½ teaspoon salt or to taste
  • ½ teaspoon pepper or to taste

Instructions
 

  • Cut 12 ounces smoked sausage into ½-inch thick rounds.
  • Cut 1 pound baby potatoes into 1-inch pieces.
  • Cut 1 red bell pepper into 2-inch long sticks.
  • Heat 3 tablespoons olive oil in a large skillet over medium-high heat.
  • Add the potatoes to the skillet, seasoning with 1 teaspoon garlic powder, 1 teaspoon oregano, 1 teaspoon parsley, ½ teaspoon salt, and ½ teaspoon pepper.
  • Cook the potatoes, stirring frequently to evenly brown until tender, about 15 minutes. Remove the potatoes from the skillet and set aside.
  • To the skillet, add the sausage, 1 cup diced yellow onion, and red bell pepper.
  • Cook until the vegetables are tender, about 5 minutes.
  • Add the potatoes back to the skillet with the sausage, stir, and cook together for another couple of minutes.
  • Remove the skillet from heat and serve.

Notes

  • Boiling Potatoes: You can boil the potatoes for 5-8 minutes before cooking in the skillet to shorten the skillet cooking time.
