Instructions
Wash the cucumbers thoroughly under cold water. You can peel them or leave the skin on based on your preference.
Slice the cucumbers into thin rounds or sticks, according to your taste. Place them in a large salad bowl.
Add salt to the cucumbers and mix well. Let them sit for about 10 minutes to release their water, making the salad crunchier.
Meanwhile, prepare the dressing. In a small bowl, mix rice vinegar, soy sauce, sesame oil, sugar, and grated ginger. Stir until the sugar dissolves.
Once the cucumbers are ready, rinse them under cold water to remove excess salt and drain well.
Add the cucumbers back to the salad bowl and pour the prepared dressing over them. Gently mix to coat the cucumbers well.
Add the sliced green onions and mix again. If you want some heat, add sliced red chili at this stage.
Let the salad rest in the refrigerator for about 10 to 15 minutes before serving to allow the flavors to meld.
Before serving, sprinkle with toasted sesame seeds for a crunchy and flavorful finish.
