Instructions
 

  • Wash the cucumbers thoroughly under cold water. You can peel them or leave the skin on based on your preference.
  • Slice the cucumbers into thin rounds or sticks, according to your taste. Place them in a large salad bowl.
  • Add salt to the cucumbers and mix well. Let them sit for about 10 minutes to release their water, making the salad crunchier.
  • Meanwhile, prepare the dressing. In a small bowl, mix rice vinegar, soy sauce, sesame oil, sugar, and grated ginger. Stir until the sugar dissolves.
  • Once the cucumbers are ready, rinse them under cold water to remove excess salt and drain well.
  • Add the cucumbers back to the salad bowl and pour the prepared dressing over them. Gently mix to coat the cucumbers well.
  • Add the sliced green onions and mix again. If you want some heat, add sliced red chili at this stage.
  • Let the salad rest in the refrigerator for about 10 to 15 minutes before serving to allow the flavors to meld.
  • Before serving, sprinkle with toasted sesame seeds for a crunchy and flavorful finish.

Notes

This salad is versatile and can be adapted to your taste. You can add other crunchy vegetables or fruits for variation.
