Ingredients
  

  • 6 Peaches halved
  • 2 tablespoons Brown Sugar
  • 2 cups Greek Yogurt
  • 1 Honey
  • ¼ cup All-Purpose Flour
  • ¼ cup Brown Sugar packed
  • 3 tablespoons Butter
  • ½ cup Quick-Cooking Oats
  • ½ cup Chopped Pistachios
  • pinch Kosher Salt

Instructions
 

  • Preheat your oven to 500º F. This high temperature will help caramelize the peaches quickly.
  • Place the halved peaches on a kitchen sheet pan with the skin side down. Sprinkle each half generously with brown sugar. The sugar will create a lovely glaze as the peaches roast.
  • Roast the peaches in the oven for about 3 to 5 minutes, or until they are browned and fragrant. Keep an eye on them to avoid overcooking. Once done, remove them from the oven and let them cool slightly.
  • While the peaches are cooling, preheat your oven to 350º F. This is the temperature you’ll need for toasting the crumble topping.
  • In a medium bowl, cut butter into the flour and brown sugar using a pastry blender or two forks until the mixture resembles coarse crumbs.
  • Stir in the oats, chopped pistachios, and a pinch of kosher salt. This mixture will become the crunchy topping that contrasts beautifully with the soft roasted peaches.
  • Spread the crumble mixture onto a small kitchen sheet pan and toast in the oven for about 10 minutes. Watch carefully until the topping is golden brown and fragrant. Once done, take it out and allow to cool.
  • To assemble the parfaits, start by placing one roasted peach half in the bottom of a parfait dish or glass. You want that beautiful caramelized side facing up.
  • Top the peach with about ¼ cup of greek yogurt. The creaminess of the yogurt pairs so well with the sweet peaches.
  • Drizzle a bit of honey over the yogurt for added sweetness and complexity.
  • Finally, sprinkle your crunchy crumble topping over the yogurt. Each spoonful should have a bit of everything for the best experience!
