  • 2 whole Vine Ripe Tomatoes sliced or chunked
  • 12 oz. fresh mozzarella cheese cut into bite-sized pieces
  • 1 lb. fresh ripe peaches sliced
  • ½ whole red onion sliced thin
  • 8 whole fresh basil leaves chopped

  • Start by preparing your ingredients. Slice the Vine Ripe Tomatoes into thin rounds or bite-sized pieces, depending on your preference. The goal here is to create a harmonious balance between the ingredients, so aim for uniformity in size.
  • Next, take your fresh peaches and slice them similarly. Their sweetness will add a lovely contrast to the savory flavors in the salad. If you prefer, you can cut them into larger chunks for a more rustic look.
  • Now, let’s work on the red onions. Slice about a quarter to half a cup into thin strips. If you find the flavor too sharp, you can soak the sliced onions in cold water for about thirty minutes to mellow their taste.
  • Cut the fresh mozzarella cheese into bite-sized pieces. If you have mozzarella pearls, feel free to use those instead for easier handling. The creaminess of the cheese will be a delightful texture against the fresh produce.
