Begin by heating the avocado oil in a large, thick-bottomed pot over medium-high heat. I like to use my Dutch oven for this as it distributes heat evenly. Once hot, add the finely chopped onion and sauté for about 5 to 8 minutes. You want the onions to turn translucent and fragrant, creating a delicious base for the dish.
Next, scoot the softened onions to one side of the pot. In the center, place the ground beef and allow it to brown for around 3 to 4 minutes. Use a spatula to break up the meat into small pieces as it cooks. You'll know it's properly browned when it loses its pink color.
Now, stir in the minced garlic, dried oregano, mushrooms, red bell pepper, sea salt, and liquid aminos (or soy sauce). Mix everything together until the ingredients are well combined and cook for about 2 minutes. The flavors will meld beautifully at this stage.
Once mixed, add the thinly sliced cabbage to the pot. Make sure it's evenly distributed. Cover the pot with a lid and allow it to cook for 5 to 10 minutes. Stir occasionally, keeping an eye on the cabbage as it softens. You want it tender but not mushy!
After the cabbage has softened, remove the lid and let everything continue to cook until most of the liquid has evaporated. This should take about 8 to 10 minutes. Keep stirring occasionally, and taste for seasoning. Add more sea salt if needed.
