Ingredients
  

  • 2 pieces boneless, skinless chicken breasts halved lengthwise
  • 1.5 teaspoons Italian seasoning

  • 2.5 tablespoons olive oil
  • 0.5 piece yellow onion thinly sliced
  • 1 piece bell pepper any color, thinly sliced
  • 2 teaspoons minced garlic
  • 1 pint grape or cherry tomatoes halved
  • 15.5 ounces canned white beans 1 can, drained and rinsed
  • 0.5 cup low-sodium chicken broth
  • 3 ounces fresh spinach
  • 1 tablespoon capers
  • to taste fresh basil optional
  • to taste lemon wedges optional

Instructions
 

  • Start by patting the chicken dry with paper towels. This helps the seasonings stick better and reduces oil splatters. Season both sides of the chicken breasts generously with Italian seasoning, salt, and pepper.
  • In a large cast iron skillet, heat olive oil over medium-high heat. Once the oil is shimmering, add the seasoned chicken breasts. Sear for about 4 to 5 minutes on each side until they are nicely browned and cooked through. You’ll know they’re done when they reach an internal temperature of 165°F. Remove the chicken from the skillet and set it aside on a plate.
  • Lower the heat to medium, adding a splash more of olive oil if needed. Add the thinly sliced yellow onion and bell pepper to the skillet. Sauté for about 3 minutes, stirring occasionally, until they begin to soften and become fragrant.
  • Stir in the minced garlic and cook it for about 30 seconds until it releases its aroma. Be careful not to burn the garlic, as it can turn bitter quickly.
  • Next, toss in the halved grape or cherry tomatoes. Cook them for about 5 minutes, letting them blister and soften. You want to see them start to collapse, which releases their sweet juices into the skillet.
  • Pour in the drained and rinsed white beans and chicken broth. Stir everything together and let the mixture simmer for about 5 minutes. This will reduce slightly and concentrate the flavors.
  • Fold in the fresh spinach and capers, allowing the spinach to wilt for about 4 to 5 minutes. This adds a lovely green element to your dish.
  • Finally, return the chicken to the skillet, allowing it to heat through for about 1 to 2 minutes. This step ensures that all the flavors meld together beautifully.
  • Once everything is heated through, serve the One Pan Italian Chicken Skillet with optional toppings of fresh basil and lemon wedges. The brightness of the lemon really enhances the overall flavor.
