Ingredients
  

  • 1 pound boneless, skinless chicken breast Cut into 1-inch pieces.
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt Divided.
  • 1 teaspoon pepper Divided.
  • 2 tablespoons olive oil Divided.
  • 1 medium zucchini Sliced into half moons.
  • 1 each red bell pepper Chopped.
  • 1 each yellow pepper Chopped.
  • 1 pound broccoli crown Cut into small florets.
  • 1 small red onion Diced.
  • 1/4 cup chicken broth
  • 1 each lemon Juice of (about 3 tablespoons).
  • 1/4 cup Italian dressing
  • to taste shaved parmesan cheese For garnish.

Instructions
 

  • Season the chicken with 1/2 teaspoon of salt, 1/2 teaspoon of pepper, and 1 tablespoon of Italian seasoning. Make sure each piece is well coated.
  • Heat a large, high-sided skillet over medium-high heat and add 1 tablespoon of olive oil. Once the oil shimmers, add the seasoned chicken to the skillet. Cook undisturbed for about 2 to 3 minutes to develop a nice sear.
  • Stir the cooked chicken and continue cooking for another 2 to 3 minutes, or until the internal temperature reaches 165˚F. Remove from the skillet and set aside.
  • In the same skillet, add the remaining 1 tablespoon of olive oil along with the chopped red bell pepper, yellow pepper, zucchini, broccoli, and red onion. Sauté for about 4 to 6 minutes, stirring occasionally until the vegetables start to soften.
  • Pour in the chicken broth and the freshly squeezed lemon juice to deglaze the pan. Scrape up any delicious brown bits stuck to the bottom.
  • Return the seared chicken to the skillet, season with the remaining salt and pepper, and stir to combine, allowing the flavors to meld.
  • Drizzle the Italian dressing over the top and give it one last gentle stir. Garnish with shaved parmesan cheese.
  • Serve warm and enjoy!
