Ingredients
  

  • 2 eggs Eggs
  • 2 tablespoons Sugar
  • 1 teaspoon Vanilla
  • ¼ teaspoon Salt
  • 2 cups Milk
  • 1 cup All-purpose flour
  • 1 tablespoon Unsalted butter (melted)
  • 2 tablespoons Butter (for cooking)
  • 2 cups Strawberries (chopped)
  • 1 cup Raspberries
  • ½ cup Nutella

Instructions
 

  • Start by mixing all the crepe ingredients in a mixer. Combine eggs, sugar, vanilla, salt, milk, flour, and the melted butter (remember to exclude the last 2 tablespoons of butter meant for cooking). Blend until the mixture is smooth. It’s essential to let the batter sit for about 20 minutes. This rest time allows the ingredients to meld, giving you a better texture.
  • While the batter rests, heat a non-stick frying pan over medium heat. Add a ½ teaspoon of butter and let it melt completely. It’s very important that the pan is hot enough to create that signature golden-brown color.
  • Once the pan is hot, pour approximately ¾ of a ladle (about ½ cup) of the crepe batter into the pan. Immediately rotate the pan to spread the mixture evenly across the surface, forming a thin layer. You should see the edges begin to lift slightly after about 1 to 2 minutes of cooking.
  • Carefully flip the crepe over using a spatula once the bottom is golden and the top is set. Allow the other side to cook for another minute until lightly browned. The crepes should be soft but fully cooked through.
  • Repeat the cooking process with the remaining batter, adding more butter to the pan as needed to prevent sticking. Stack the finished crepes on a plate, ensuring to keep them warm as you finish the batch.
  • Once all the crepes are ready, take one crepe and spread a generous layer of Nutella on top. Top it off with a handful of chopped strawberries and raspberries. The fresh fruit adds a wonderful contrast to the creamy Nutella.
  • Carefully roll up the crepe around the filling. You can serve them as is or cut them into halves for easier handling. The presentation is beautiful, and the aroma is irresistible!
  • Serve immediately while warm, allowing everyone to enjoy the gooey Nutella combined with the freshness of the berries. You can also dust them with powdered sugar for an extra touch of sweetness!
