Ingredients
  

  • 2 tablespoons olive oil
  • 1 pound chicken thighs (boneless and skinless, cut into 1-inch pieces)
  • 1 teaspoon Italian Seasoning
  • ¼ teaspoon salt (or to taste)
  • ¼ teaspoon pepper (or to taste)
  • ¼ teaspoon red pepper flakes
  • 4 tablespoons butter (unsalted, divided)
  • 8 ounces cremini mushrooms (sliced)
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • 2 cloves garlic (minced)
  • 2 tablespoons fresh parsley (chopped)

Instructions
 

  • Cook the chicken: Heat the olive oil in a large skillet over medium-high heat. Add the chicken thigh pieces and season with the Italian seasoning, salt, pepper, and red pepper flakes. Stir and cook for about 5 to 6 minutes until the chicken browns and is cooked through. Transfer the chicken to a plate and set aside.
  • Cook the mushrooms: Add 2 tablespoons of the butter to the same skillet and melt. Add the sliced mushrooms then season with onion powder and garlic powder. Stir and cook for about 4 minutes or until the mushrooms start to brown.
  • Finish the dish: Add the chicken back to the skillet along with any juices released in the plate. Add remaining 2 tablespoons of butter and minced garlic. Stir everything together and cook for 1 to 2 more minutes. Taste for salt and pepper and adjust as necessary. Remove from heat and garnish with parsley. Serve warm.

Notes

  • Tip 1: If you’re really short on time, pick up a rotisserie cooked chicken instead of cooking your own.
  • Tip 2: Mushrooms need to be cleaned. You can use the dry method of brushing them or wiping them with a cloth. If you choose to wash them with water, they should be dried as much as possible, since they act like sponges, but either method will work.
  • Tip 3: Place any leftovers in an airtight container for up to 3 to 4 days. It heats up wonderfully either in the microwave or on the stovetop.
  • Tip 4: Once thoroughly cooled, place the chicken and mushroom mixture in an airtight container or freezer-safe bag and store in the freezer for up to 4 months. When thawed, heat through and serve with your side dish.
