Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound chicken breast cut into strips

  • 1/4 cup buttermilk
  • 1 oz Mediterranean veggie chips I used Terra brand
  • 2 teaspoons seasoned salt
  • 2 teaspoons pepper

Instructions
 

  • Preheat the oven to 375 degrees. This is an important step as it ensures the chicken will cook evenly and develop a beautiful golden color.
  • Next, grease a sheet pan with olive oil. This will prevent the chicken from sticking and help it crisp up nicely.
  • In a bowl, combine the butter with buttermilk. Stir well until fully blended, then add the chicken strips. Toss the chicken, making sure each piece is generously coated with the buttermilk mixture.
  • Set the chicken aside for a moment as you prepare the crust. Using a food processor, pulse the Mediterranean veggie chips into fine crumbs. This will create a flavorful coating that sticks wonderfully to the chicken.
  • Transfer the chip crumbs to a medium-sized mixing bowl. Now it's time to get hands-on with the chicken. Working with one piece at a time, roll the chicken in the veggie chip crumbs. Make sure to press the crumbs into the chicken with your fist to get an even coating.
