Begin by preparing your cauliflower. Cut it into florets, ensuring they are about the same size for even cooking.
Next, place a steam basket inside your Instant Pot. If you don’t have a steam basket, a wire rack will work just fine. Add one cup of water to the pot to create steam.
Carefully arrange the cauliflower florets in the steam basket or on top of the rack. Make sure they’re not overcrowded; you want them to cook evenly.
Secure the lid on the Instant Pot and turn it until locked. Set it to cook on high pressure for four minutes.
Once the cooking time is complete, perform a quick release of the steam.
After the steam has released, carefully unlock the lid and transfer the steamed cauliflower to a large bowl.
In a small skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and sauté for about two minutes. The garlic should be fragrant and light golden.
Pour the sautéed garlic into the bowl with the steamed cauliflower. Add the butter and the minced herbs.
Using a handheld immersion blender, mash the cauliflower mixture until you reach your desired consistency.
Finally, season your Mashed Cauliflower with Kosher salt and black pepper to taste. Serve warm and enjoy!
