Ingredients
  

  • 1 large head Cauliflower cut into florets
  • 1 tablespoon Olive oil
  • 2 cloves Garlic minced
  • 2 tablespoons Salted butter
  • 1 to 2 teaspoons Fresh herbs (thyme, rosemary, sage, chives)
  • to taste Kosher salt and black pepper

Instructions
 

  • Begin by preparing your cauliflower. Cut it into florets, ensuring they are about the same size for even cooking.
  • Next, place a steam basket inside your Instant Pot. If you don’t have a steam basket, a wire rack will work just fine. Add one cup of water to the pot to create steam.
  • Carefully arrange the cauliflower florets in the steam basket or on top of the rack. Make sure they’re not overcrowded; you want them to cook evenly.
  • Secure the lid on the Instant Pot and turn it until locked. Set it to cook on high pressure for four minutes.
  • Once the cooking time is complete, perform a quick release of the steam.
  • After the steam has released, carefully unlock the lid and transfer the steamed cauliflower to a large bowl.
  • In a small skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and sauté for about two minutes. The garlic should be fragrant and light golden.
  • Pour the sautéed garlic into the bowl with the steamed cauliflower. Add the butter and the minced herbs.
  • Using a handheld immersion blender, mash the cauliflower mixture until you reach your desired consistency.
  • Finally, season your Mashed Cauliflower with Kosher salt and black pepper to taste. Serve warm and enjoy!

Notes

  • Tip 1: If you don't have an Instant Pot, you can steam the cauliflower on the stove top using a steam basket. Steam for 6 to 8 minutes.
