  • 2 pieces boneless skinless chicken breasts per marinade

  • 1/4-1/2 cup favorite BBQ sauce
  • 1/4 cup plain Greek yogurt
  • 2 teaspoons curry powder
  • 2 teaspoons brown sugar
  • 1 teaspoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 cup salsa verde
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 2 teaspoons sesame oil
  • 2 teaspoons minced ginger

Instructions
 

  • First, preheat your oven to 350 degrees Fahrenheit. This step is crucial as it ensures that your chicken will cook evenly. A hot oven helps seal in the juices, making the chicken tender and flavorful.
  • In a mixing bowl or a ziplock bag, combine all your marinade ingredients: olive oil, lemon juice, salt, cilantro, parsley, lime juice, and all the spices. Mix them well until fully combined. The aroma will be so inviting!
  • Next, add the chicken breasts to the bowl or bag. Make sure to coat each piece thoroughly with the marinade. You want every inch of the chicken to soak up those flavors.
  • Allow the chicken to marinate for at least 15 minutes on the countertop, or for an even more intense flavor, overnight in the fridge. The longer you marinate, the better!
  • If you decide to save some for later, you can freeze the marinated chicken now. Just place it in a freezer-safe container, and it’ll be ready for another day.
  • Once you’re ready to cook, take the marinated chicken out of the fridge (if marinated overnight) and place it in a baking dish. Make sure to preheat your oven again if it’s been a while.
  • Bake the chicken in the preheated oven for 25 to 30 minutes. Keep an eye on it, and check that the internal temperature reaches 165 degrees Fahrenheit. This ensures it’s fully cooked and safe to eat.
  • If you’re feeling adventurous and want to use an air fryer, set it to 375 degrees Fahrenheit and air fry the chicken for about 8 to 15 minutes. The air fryer gives it a juicy interior and a crispy exterior.
  • Alternatively, if grilling is your style, preheat your grill to medium-high heat. Grill the chicken for about 5 to 6 minutes per side, until the internal temperature reaches 165 degrees Fahrenheit. The char will add a delightful smoky flavor.
  • Finally, remove the chicken from the oven or grill and let it rest for a few minutes before serving. This allows the juices to redistribute, making each bite even more succulent.
