Ingredients
  

  • 1 pound free-range boneless, skinless chicken breast
  • Pinch sea salt
  • 1 teaspoon sesame oil
  • 1/4 cup coconut flour
  • 1/2 teaspoon ground ginger
  • 4 egg whites
  • 6 tablespoons toasted sesame seeds
  • Cooking spray of choice Cooking spray
  • 2 tablespoons natural, creamy almond butter
  • 4 teaspoons coconut aminos (or gluten-free soy sauce)
  • 1 tablespoon water
  • 2 teaspoons rice vinegar
  • 1 teaspoon sriracha (or to taste)
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon monk fruit (omit for Whole30)

Instructions
 

  • Preheat your air fryer to 400 degrees Fahrenheit for 10 minutes.
  • While the air fryer heats, cut the chicken into nugget-sized pieces about 1-inch thick. Make sure to pat them dry to ensure crispiness. Place them in a bowl and toss with a pinch of sea salt and sesame oil until they are evenly coated.
  • In a large Ziploc bag, combine coconut flour and ground ginger. Shake well to mix. Add the coated chicken pieces to the bag and shake until each piece is thoroughly coated in the flour mixture.
  • In a separate bowl, place the egg whites. Add in the chicken nuggets and toss them until they are all well coated with the egg.
  • In another Ziploc bag, add the toasted sesame seeds. Shake off any excess egg from the chicken and place the nuggets into the bag. Shake until the nuggets are coated with the sesame seeds.
  • Generously spray the air fryer basket with cooking spray. Place the nuggets in the basket, ensuring they are not overcrowded. This is key to achieving a crispy texture. Lightly spray the nuggets again with cooking spray.
  • Cook for 6 minutes, then carefully flip each nugget over. Spray the nuggets with cooking spray again before cooking for an additional 5 to 6 minutes until they are golden brown and no longer pink inside.
  • While the nuggets are cooking, whisk together all the sauce ingredients in a medium bowl. This will be your delicious dip for serving.
  • Once the nuggets are done cooking, remove them from the air fryer and serve them hot with the sauce. Enjoy every crunchy bite!
