Equipment

  • Frying Pan
  • Oven
  • Grater
  • Chef's Knife

Ingredients

  • 1 ball pizza dough
  • Kosher salt
  • Olive oil
  • ¼ cup basil pesto
  • 8 ounces grated, low moisture mozzarella cheese
  • ½ small Meyer lemon halved, thinly sliced, seeds removed
  • 4 ounces goat cheese crumbled
  • 2 cups chopped broccoli florets
  • Crushed red pepper flakes
  • Fresh chopped basil for topping

Instructions

  • Preheat your oven to 500°F and set your oven rack in the lowest possible position. This high temperature is key to achieving a perfectly crispy crust.
  • Lightly coat a pizza pan with nonstick cooking spray. This will prevent the dough from sticking and make it easier to transfer the pizza.
  • Stretch the pizza dough into a round large enough to fit the pizza pan. Use your hands to work the dough gently, ensuring it’s even and not too thick in any one spot.
  • Very lightly drizzle the stretched dough with olive oil, using your hands to evenly spread it around. This will help the crust crisp up beautifully.
  • Sprinkle the dough with a small pinch of Kosher salt to enhance the flavor.
  • Top the pizza evenly with basil pesto and then sprinkle generously with grated mozzarella cheese. This combination creates a fantastic flavor foundation.
  • Scatter the sliced lemon pieces and crumbled goat cheese over the top. The lemon will provide a bright, tangy flavor that pairs wonderfully with the cheese.
  • Toss the chopped broccoli with about 1 tablespoon of olive oil before scattering it evenly on the pizza. This will ensure it roasts nicely in the oven.
  • Finish with a sprinkling of Kosher salt and crushed red pepper flakes to add a bit of spice.
  • Carefully transfer the pizza to the oven on the lowest rack and cook until the crust is golden brown and the cheese is bubbly, which should take about 9 to 11 minutes. Keep an eye on it to prevent burning.
  • Once done, remove the pizza from the oven and finish it off with a sprinkle of fresh chopped basil for a vibrant touch.

Notes

  • Tip 1: Store any leftover pizza in an airtight container in the fridge for up to three days.
  • Tip 2: You can freeze the assembled pizza before baking. Just wrap it tightly in plastic wrap and foil; bake directly from the freezer when you’re ready to enjoy!
  • Tip 3: This pizza pairs excellently with a light salad or some roasted vegetables on the side to keep the meal balanced.
  • Tip 4: Feel free to swap the basil pesto for tomato sauce for a different flavor profile.
  • Tip 5: Add more vegetables like mushrooms, bell peppers, or spinach for extra nutrition and flavor.
