  • 1 cup water
  • ¾ cup sugar
  • 9 tablespoons butter
  • 18 ounces semisweet chocolate
  • 6 eggs

  • Preheat your oven to 350°F. Ensure it's fully heated before you place the cake inside. A properly preheated oven is crucial for even baking.
  • Butter a 10-inch springform pan generously. Line the bottom with parchment paper and butter the parchment as well. This helps ensure the cake releases flawlessly without sticking.
  • Wrap three layers of heavy-duty foil around the outside of the pan. This will create a water bath, which helps the cake cook evenly and prevents it from drying out.
  • In a small saucepan, combine 1 cup of water and ¾ cup sugar. Bring this mixture to a boil over medium heat, stirring until the sugar dissolves. Once boiling, reduce the heat and let it simmer for about 5 minutes before removing it from the heat.
  • In another bowl, gently melt 9 tablespoons of butter and 18 ounces of semisweet chocolate together in the microwave. Stir until smooth. Whisk in the warm sugar syrup until well combined and allow it to cool slightly.
  • Add 6 eggs to the chocolate mixture. Whisk until everything is well blended. You want a glossy mixture without lumps.
  • Pour your batter into the prepared springform pan. Make sure it’s evenly distributed to ensure uniform baking.
  • Place the cake pan in a large roasting pan. Carefully add enough hot water to the roasting pan to come halfway up the sides of the cake pan. This water bath is essential for achieving that moist texture.
  • Bake the cake for about 50 minutes, or until the center is just set. It should spring back slightly when touched. Avoid opening the oven door frequently as it can cause the temperature to drop.
  • Once baked, carefully remove the pan from the water bath and let it cool completely on a rack. This cooling process helps the cake firm up and makes it easier to slice.

Notes

When storing leftovers, make sure to keep them in an airtight container in the refrigerator. You can freeze leftover slices for up to 3 months. Just wrap them tightly in plastic wrap and foil.
