Equipment

  • sheet pan
  • Mixing Bowl

Ingredients

  • 1 pound boneless skinless chicken thighs
  • 1 tablespoon extra virgin olive oil
  • ½ teaspoon kosher salt
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon paprika or smoked paprika
  • ¼ teaspoon cayenne powder (optional)
  • ¼ teaspoon ground black pepper

Instructions

  • Preheat your oven to 350°F (180°C). If you have a fan oven, adjust to 160°C. This ensures an even cook on your chicken.
  • Line a baking sheet with aluminum foil or parchment paper. This makes for an easier cleanup later, which I always appreciate.
  • In a large bowl, combine the chicken thighs with olive oil, kosher salt, garlic powder, onion powder, paprika, cayenne, and black pepper. Toss everything together well to coat the chicken evenly with the seasoning.
  • Place the chicken thighs on the prepared baking sheet in a single layer. Make sure they’re not touching to ensure they bake evenly.
  • Bake in the preheated oven for 15 to 20 minutes. You’re looking for the internal temperature to reach 165°F (74°C). A meat thermometer is your best friend here!
  • If you want a crispy finish, place the chicken under the broiler for a couple of minutes. Just keep an eye on them so they don’t burn!
  • Once done, remove the chicken from the oven and let it rest for about 5 minutes. This step is crucial, as it helps the juices redistribute throughout the meat.
  • Serve the baked chicken thighs with your choice of sides, like mashed potatoes, rice, pasta, salad, or steamed veggies. Enjoy every single bite!

Notes

  • Tip 1: Keep any leftovers in an airtight container in the fridge for up to 3 days for best results.
  • Tip 2: You can freeze the chicken thighs for up to 3 months. Just thaw them overnight in the refrigerator before reheating.
  • Tip 3: Feel free to swap out seasonings or add your favorites to create your unique flavor profile.
  • Tip 4: Depending on the size of the chicken thighs, adjust the baking time accordingly. Always check the internal temperature.
  • Tip 5: Serve with seasonal veggies or a fresh salad to balance out the richness of the chicken.
