Ingredients
  

  • 4 Chicken Breasts, boneless, skinless
  • 1 cup Cream Cheese, at room temperature
  • 1/2 cup sharp Cheddar, shredded
  • 2 Jalapenos, deseeded and diced
  • 1 Egg
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper, ground
  • 1 cup Panko Breadcrumbs
  • 1/2 teaspoon Paprika
  • 2 tablespoons Butter, melted

Instructions
 

  • Preheat your oven to 400 degrees Fahrenheit. This is an essential step that ensures even cooking, allowing the chicken to bake perfectly.
  • Take each chicken breast and slice it lengthwise, being careful to cut only three-fourths of the way through. You want to create a pocket without cutting all the way through so that we can stuff these beauties with our filling.
  • In a medium mixing bowl, combine the cream cheese, cheddar, and jalapenos. Mix until smooth and well blended. The mixture should be creamy with visible bits of jalapeno throughout.
  • In another bowl, whisk the egg, salt, and black pepper together. This egg mixture will help the breadcrumbs adhere to the chicken later.
  • Now, in a third bowl, mix the panko breadcrumbs, salt, and paprika. This will create a crispy coating for our stuffed chicken.
  • Generously stuff each chicken breast with the jalapeno mixture. Use a toothpick to secure the edges. It’s okay if some filling oozes out; that just means more flavor!
  • Sprinkle a little extra salt and pepper on both sides of the stuffed chicken. This will enhance the flavor of the chicken itself.
  • Dip each stuffed chicken breast into the egg mixture, ensuring it's fully coated. Allow any excess to drip off. Then, dredge it in the breadcrumb mixture, pressing gently to adhere.
  • Place the prepared chicken breasts on a baking sheet lined with parchment paper. Brush the tops with melted butter. This step adds richness and helps achieve that golden color.
  • Bake in the preheated oven for 30 to 35 minutes, or until the internal temperature reaches 165 degrees Fahrenheit. The chicken should be golden brown and crisp on the outside while remaining juicy on the inside. Serve hot and enjoy!
