Ingredients
  

  • 1 teaspoon Avocado or Olive Oil
  • 1 medium Onion diced
  • 3 cloves Garlic minced
  • 1 cup Roasted Red Peppers diced
  • 1 cup Long-Grain White Rice rinsed and drained
  • 1 cup Chicken Broth
  • 1.5 pounds Farmer Focus Boneless and Skinless Chicken Breasts cut into bite-sized pieces
  • 1 tablespoon Lemon Juice
  • 1 tablespoon Italian Seasoning
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 cup Frozen Peas
  • 0.5 cup Parmesan Cheese
  • Fresh Parsley for serving

Instructions
 

  • First, let’s get started by heating the oil in your Instant Pot using the sauté function. It should shimmer, indicating it's hot and ready for the next step.
  • Add the diced onion and minced garlic to the pot. Stir them frequently for about 5 minutes, until they begin to soften and release their wonderful aroma.
  • Once softened, turn off the sauté function. It's time to add the diced red peppers, rinsed and drained rice, chicken broth, pieces of chicken, lemon juice, Italian seasoning, salt, and pepper. Mix everything well to combine.
  • Next, secure the lid on the Instant Pot and make sure the valve is set to sealing. Select the manual high-pressure setting and set it for 10 minutes.
  • When the timer goes off, carefully use a quick pressure release to vent the steam. Be cautious of the hot steam as it escapes!
  • Once the pressure has fully released, remove the lid. Stir in the frozen peas and parmesan cheese, mixing until everything is well combined. The peas will warm through quickly.
  • Put the lid back on, ensuring it’s sealed, and let the mixture steam for another 2 minutes. This will help the peas to cook just right without losing their vibrant color.
  • Finally, give everything a good stir once again. Serve your Instant Pot Italian Chicken and Rice immediately, garnished with fresh parsley for a touch of brightness.

Notes

When it comes to storing the leftovers, they can be kept in an airtight container in the fridge for up to 4 days. You can also freeze this dish for up to 3 months! Just thaw in the fridge overnight before reheating.
