Ingredients
  

  • 2 large chicken breasts cut into 1 inch pieces
  • ½ teaspoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 2 tablespoons olive oil
  • 1 15-ounce can diced tomatoes undrained, See note 1 for sub
  • 2 cups water
  • 12 ounces uncooked penne pasta See note 2
  • ½ cup grated parmesan cheese freshly from a block
  • 4 plum tomatoes diced
  • 1 small red onion diced
  • 3 cloves garlic minced
  • ½ cup chopped fresh basil loosely packed
  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper

Instructions
 

  • Start by preparing the bruschetta topping. In a mixing bowl, combine the plum tomatoes, diced red onion, minced garlic, chopped basil, lemon juice, salt, and ground black pepper. Stir everything together until well mixed and set it aside to let the flavors meld.
  • Next, add the chicken pieces into the Instant Pot. Sprinkle with the Italian seasoning, salt, ground black pepper, and olive oil. Pour in the can of diced tomatoes. Using a wooden spoon, gently mix everything together until the chicken is coated in the seasonings.
  • Now it’s time to add the uncooked penne pasta. Spread it over the chicken mixture, ensuring it’s laid evenly. Then, pour in water until it just covers the pasta. This is crucial for cooking it properly.
  • Secure the lid on the Instant Pot, making sure the vent is set to the SEALING position. Select the PRESSURE COOK/MANUAL setting and adjust the cooking time to 3 minutes at high pressure. Remember that it will take about 10 minutes for the pot to come to pressure before cooking starts.
  • When the cooking cycle ends, quickly release the steam by turning the valve to VENTING. Carefully remove the lid once all the steam escapes. You’ll see that the pasta has absorbed most of the liquid.
  • Give everything a good stir, mixing in the parmesan cheese and the bruschetta topping you prepared earlier. Make sure all ingredients are well combined. Cover the pot with the lid and let it sit for 5 minutes to allow the flavors to meld further.
  • Right before serving, garnish with extra fresh basil and a sprinkle of parmesan cheese on top. This not only adds flavor but also makes for a beautiful presentation!

Notes

For creamier pasta, mix in half a cup of heavy cream or sour cream at the very end. If you’re serving this to children, adjust the amount of the fresh garlic. This dish is quite garlicky if you make it as written, so adjust to your preference. For extra flavor, you can add a drizzle of balsamic glaze right before serving.
