Ingredients
  

  • 12 spears asparagus bottom of spears cut off
  • 1 medium red pepper sliced into strips
  • 1 tablespoon olive oil
  • 1/2 teaspoon kosher salt
  • 4 leaves collard greens large, thick stems removed
  • 1 cup hummus for a fun kick, try a flavored hummus!
  • 1/2 cup cucumber peeled and sliced into thin strips
  • 1/2 cup carrots shredded
  • 1/2 cup zucchini sliced into thin strips
  • 1/2 cup red cabbage sliced thin
  • 1/4 cup bean sprouts
  • 1 each avocado peeled, pit removed, and cut into strips

Instructions
 

  • Preheat your oven to 450 degrees. This will ensure that your vegetables roast perfectly.
  • In a small bowl, toss the asparagus spears and red pepper strips with the olive oil and kosher salt. Make sure they are well coated.
  • Spread the coated vegetables in a single layer on a baking sheet. This will help them roast evenly.
  • Bake for about 20 minutes or until the skins of the asparagus and red pepper begin to blister and char. This adds a lovely smoky flavor.
  • Once done, remove from the oven and let them cool completely. This will make it easier to handle them later.
  • Lay the collard greens leaves flat on a clean surface. Ensure they are smooth and ready to be filled.
  • Spread about 1/4 cup of hummus onto half of each collard green leaf, covering it generously.
  • Top with three asparagus spears and divide the red pepper among each leaf.
  • Layer the remaining ingredients evenly between the leaves: cucumber, carrots, zucchini, red cabbage, bean sprouts, and slices of avocado.
  • Now, fold about 1/4 inch of each leaf towards the center and tightly roll them up like a burrito. Make sure they are secure so that the fillings don’t fall out.
