How To Roast A Whole Chicken

Ingredients
  

  • 1.5 tsps salt
  • ½ tsp pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian herbs
  • 3 medium carrots cut in large 2” chunks
  • 1 medium yellow onion cut in quarters
  • 7 medium Yukon gold potatoes halved
  • ½ tbsp olive oil
  • ½ tbs poultry seasoning
  • 1 whole chicken
  • 1 tbsp olive oil
  • 2 tbs poultry seasoning use the Sip Bite Go suggested seasoning for whole chicken or use BBQ rub or something you like
  • ½ medium lemon
  • 1 tbsp butter for broiling to make crispy skin at the end
  • 1 tsp cilantro fresh chopped for serving

Instructions
 

  • Preheat the oven to 375 degrees F.
  • Make the whole chicken seasoning blend by stirring together all the spices. Set aside.
  • Toss the chopped veggies with olive oil. Add seasoning blend and toss until well seasoned. Set aside.
  • Remove the whole chicken from the bag and remove the insides if they are present. Pat the chicken dry with paper towels.
  • Coat the chicken all over with olive oil. Generously apply the rest of the seasoning blend.
  • Add lemon to the inside of the chicken cavity if desired.
  • Set out a rimmed baking pan and add the vegetables in a flat layer. Add a wire rack on top to hold the chicken.
  • Roast the chicken in the oven until the internal temperature reaches 165 degrees F. This should take about 90 minutes.
  • Remove the chicken from the oven. Now it’s time to crisp up the skin by broiling.
  • Let the chicken rest for 20 minutes before carving and enjoy!
