- 1.5 tsps salt
- ½ tsp pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp Italian herbs
- 3 medium carrots cut in large 2” chunks
- 1 medium yellow onion cut in quarters
- 7 medium Yukon gold potatoes halved
- ½ tbsp olive oil
- ½ tbs poultry seasoning
- 1 whole chicken
- 1 tbsp olive oil
- 2 tbs poultry seasoning use the Sip Bite Go suggested seasoning for whole chicken or use BBQ rub or something you like
- ½ medium lemon
- 1 tbsp butter for broiling to make crispy skin at the end
- 1 tsp cilantro fresh chopped for serving
Preheat the oven to 375 degrees F.
Make the whole chicken seasoning blend by stirring together all the spices. Set aside.
Toss the chopped veggies with olive oil. Add seasoning blend and toss until well seasoned. Set aside.
Remove the whole chicken from the bag and remove the insides if they are present. Pat the chicken dry with paper towels.
Coat the chicken all over with olive oil. Generously apply the rest of the seasoning blend.
Add lemon to the inside of the chicken cavity if desired.
Set out a rimmed baking pan and add the vegetables in a flat layer. Add a wire rack on top to hold the chicken.
Roast the chicken in the oven until the internal temperature reaches 165 degrees F. This should take about 90 minutes.
Remove the chicken from the oven. Now it’s time to crisp up the skin by broiling.
Let the chicken rest for 20 minutes before carving and enjoy!
