  • 1 pound medium-sized red potatoes
  • 1 cup buttermilk
  • 3 tablespoons butter
  • 1/2 cup Parmesan cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground pepper

Instructions
 

  • Begin by scrubbing the potatoes under running water to ensure they are clean. Place them in a single layer in a microwave-safe dish. This is a quick way to cook them without the hassle of boiling.
  • DO NOT PIERCE THE POTATOES! Cover the dish tightly with plastic wrap, making sure it doesn't touch the potatoes. Vent the top slightly to let steam escape.
  • Microwave the potatoes on high for about 8 minutes. Check if they are soft and tender by poking one with a fork. If they need more time, microwave in additional 1 to 2-minute increments.
  • Once cooked, carefully remove the dish from the microwave. The steam will be hot, so take caution! Add the buttermilk, butter, and the remaining ingredients to the potatoes.
  • Using a potato masher, mash everything together until you reach your desired consistency. Some people prefer them chunky, while others like them super smooth—it's all about personal preference!
  • Season with additional salt and pepper if needed. Give them a final stir to ensure everything is combined evenly.
  • Transfer the mashed potatoes to a serving bowl. Feel free to add a pat of butter on top for that extra touch of indulgence.
