Ingredients
  

  • 2 medium zucchini sliced lengthwise into 1/4-inch-thick slices
  • 1 tablespoon extra-virgin olive oil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon fresh parsley chopped
  • lemon wedges for finishing the dish

Instructions
 

  • Preheat your grill or grill pan to medium heat.
  • Place the zucchini slices on a large plate or tray. Drizzle them with the extra-virgin olive oil and sprinkle with garlic powder, kosher salt, and freshly ground black pepper. Toss them gently to ensure each slice is evenly coated.
  • Once the grill is ready, place the zucchini slices carefully on the grill. Grill them for 1 to 3 minutes on each side.
  • After grilling, remove the zucchini from the grill and squeeze fresh lemon juice over them.
  • Garnish with freshly chopped parsley before serving.

Notes

  • Storage: Store leftover grilled zucchini in an airtight container in the fridge. They can last for up to 3 days, but they taste best fresh!
