Ingredients
  

  • 1 cup oat flour
  • 1 cup almond flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup mashed very ripe banana (about 1 to 1.5 bananas)
  • 2 eggs
  • 1/3 cup almond milk (or milk of choice)
  • 1/4 cup honey
  • 1 tsp vanilla
  • 1/2 cup finely chopped strawberries
  • 1/2 cup white chocolate chips optional
  • 1 Tbsp coconut oil
  • 2 drops pink food coloring optional

Instructions
 

  • Preheat your oven to 350 degrees F. This ensures that your donuts start cooking immediately when they go in, allowing for an even bake.
  • In a large mixing bowl, combine the almond flour, oat flour, baking powder, and salt. Whisk them together until well blended. You want to ensure there are no clumps, as this will affect the texture of your donuts.
  • In another bowl, whisk together the mashed bananas, eggs, almond milk, honey, and vanilla. The mixture should be smooth and well combined, with no visible chunks of banana. This wet mixture will add moisture to your dry ingredients.
  • Carefully add the wet ingredients to the dry mixture. Use a spatula to gently fold them together until just combined. Be careful not to over mix; a few lumps are perfectly fine!
  • Next, fold in the finely chopped strawberries, ensuring they are evenly distributed throughout the batter. This is where the donuts get their fruity flavor!
  • Generously spray your donut pans with nonstick spray to ensure the donuts release easily after baking. It’s always a good idea to prevent sticking.
  • Using a pastry bag or a ziplock bag with the corner snipped off, gently pipe the batter into each donut well. Fill them about 2/3 full to allow for rising.
