Ingredients
  

  • 1 cup shredded cabbage
  • 1 medium carrot julienned
  • 1/2 cup thinly sliced bell pepper
  • 1/4 cup finely chopped green onions
  • 1 teaspoon soy sauce
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 cup cooked vermicelli noodles
  • 12 spring roll wrappers
  • Vegetable oil for frying

Instructions
 

  • Start by preparing the filling. In a large bowl, combine shredded cabbage, julienned carrot, thinly sliced bell pepper, finely chopped green onions, soy sauce, black pepper, and salt. Mix well until all the veggies are evenly coated with the seasonings. You want to ensure that each bite is packed with flavor!
  • Add cooked vermicelli noodles to the vegetable mixture. Gently toss everything together to combine. The noodles will add a fantastic chewy texture that complements the crisp veggies perfectly.
  • Lay a spring roll wrapper on a flat surface, with one corner pointing towards you. Spoon about two tablespoons of the filling near that corner. Be careful not to overfill, or they may burst while frying!
  • Starting from the corner with the filling, fold the wrapper tightly over the filling. Then, fold in the sides to enclose the filling fully. Use a little water on the edge of the wrapper to seal it. Make sure it's secure to prevent any filling from escaping during frying.
  • In a deep-fryer or large pan, heat vegetable oil to 350°F. This is the perfect temperature for frying; too low, and your rolls will soak up too much oil, and too high will burn them.
  • Carefully add the spring rolls to the hot oil in batches. Fry them for about three minutes or until they are golden brown and crispy. Keep an eye on them to ensure they don't overcook. The sizzling sound is always a good sign!
  • Once golden, use a slotted spoon to remove the spring rolls from the oil and drain them on paper towels. This helps absorb any excess oil and keeps them crispy.
  • Let the Fried Spring Rolls cool slightly before serving. They are best enjoyed hot and fresh, either on their own or with your favorite dipping sauce.
