  • 2 8 ounce flat iron steaks
  • Kosher salt and pepper
  • 1/3 cup balsamic vinegar

  • 1 shallot, minced
  • 1 green onions, sliced
  • 1 large sprig rosemary, minced
  • 1 head radicchio, quartered
  • 1 tablespoon olive oil
  • 2 cups baby arugula
  • 1/2 cup crumbled blue cheese

  • Start by laying out your flat iron steaks on a clean surface. Season both sides liberally with Kosher salt and pepper. This simple seasoning is crucial as it enhances the natural flavors of the meat. Let the steaks sit while you prepare the marinade. The resting period allows the salt to penetrate, making the steaks flavorful and tender.
  • In a medium-sized mixing bowl, whisk together balsamic vinegar, minced garlic cloves, shallot, green onion, and minced rosemary. This mixture will be the marinade for the radicchio. Toss the quartered radicchio in the bowl until it’s well-coated. Let it sit and marinate for at least 10 minutes. This resting time allows the radicchio to absorb the flavors.
  • While the radicchio is marinating, preheat your oven to 375 degrees Fahrenheit. This temperature is ideal for roasting the radicchio, ensuring it becomes tender and caramelized without burning.
  • After 10 minutes, place the marinated radicchio on a parchment-lined baking sheet. Spread it out evenly to ensure it roasts properly. Place it in the preheated oven and let it roast for about 8 minutes. You’ll know it’s done when the leaves become soft and slightly wilted.
