  • 2 sheets frozen puff pastry thawed
  • 2 cups sliced peaches
  • 1 tablespoon arrowroot powder or cornstarch

  • 2 teaspoons vanilla extract
  • 1/4 cup peach jam
  • 2-4 tablespoons honey
  • 1 egg beaten
  • 2 tablespoons candied ginger chunks
  • 1/2 cup coarse sugar

  • Preheat your oven to 375° F. Line a baking sheet with parchment paper to catch any drips from the galette.
  • In a medium-sized bowl, combine the sliced peaches, arrowroot powder, ground ginger, and vanilla extract. Toss these together gently to ensure the peaches are well coated. Then, add the peach jam and honey, and toss again. You want to make sure every slice of peach is glistening with sweetness!
  • Take one sheet of thawed puff pastry and roll it out slightly to stretch it. Carefully transfer it to the prepared baking sheet, making sure it fits comfortably.
