Ingredients
  

  • 1 1/2 cups lukewarm water
  • 1 package active dry yeast (2 1/4 teaspoons)
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 2 cups whole wheat flour
  • 1/4 cup pesto sauce
  • 1 cup mozzarella cheese (shredded)
  • 1 cup spinach
  • 1/2 cup sliced mushrooms
  • 1/4 cup cherry tomatoes (halved)

Instructions
 

  • In the bowl of a stand mixer, add the water and the yeast. Let proof for 5 to 7 minutes. Add in the sugar, salt, and wheat flour. Using the dough hook on medium, mix until the dough starts to form. Remove from the stand mixer and shape into a ball.
  • Add the olive oil to a medium-sized bowl and add the dough. Cover and let rise for 30 minutes.
  • Preheat oven to 400 degrees. Divide the dough in half. Roll out the dough to 1/4 inch thick and place on a pizza baking sheet or stone.
  • Add the pesto, cheese, mushrooms, and cherry tomatoes. Bake for 12 to 15 minutes or until golden brown.
