  • 1/2 cup Corn
  • 1/2 cup Bell pepper, chopped
  • 1/2 cup Onion, chopped
  • 1/4 cup Cilantro, chopped
  • 1 tablespoon Butter or oil
  • 1/2 teaspoon Paprika
  • 1/2 teaspoon Garlic powder
  • 1/2 teaspoon Onion powder
  • 1/2 teaspoon Cumin
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 lime Juice of lime
  • 1.5 cup Shredded cheese (mozzarella or Mexican blend)
  • 2 cups Cooked rice (optional)
  • 8 medium Flour tortillas
  • Oil or cooking spray

Instructions
 

  • Begin by heating a large skillet over medium heat. Add the black beans, corn, bell peppers, onion, and cilantro to the skillet. Include a tablespoon of butter or oil along with the juice of 1 lime. Sprinkle in paprika, garlic powder, onion powder, cumin, salt, and black pepper. Sauté these ingredients for 2 to 4 minutes on high heat until they are heated through and fragrant. You’ll notice the vibrant colors and delicious aromas filling your kitchen.
  • Once your mixture is ready, take it off the heat and set it aside. This filling is what makes your burritos so hearty and flavorful, so you want to ensure it’s perfect.
  • Next, lay a medium-sized flour tortilla flat on a plate or clean surface. Spoon 1/4 cup of the bean mixture onto the center, followed by 1/4 cup of cooked rice if you’re using it. Top this with 2 to 3 tablespoons of shredded cheese.
  • Now, it’s time to roll your burrito! Be sure to leave about 2 to 3 inches of space from the corners. Start by folding the edges over the filling, then roll the tortilla tightly from one end to the other. This step is crucial for preventing filling from spilling out while cooking.
  • Repeat the process for the remaining tortillas and filling mixture until you have all eight burritos wrapped and ready to go.
  • In the same skillet, add about 1 teaspoon of oil and heat it on medium. Place the wrapped burritos seam-side down in the skillet.
