Ingredients
  

  • 2 pounds strawberries the larger berries, the better!
  • 6 ounces high-quality chocolate chopped
  • 1 tablespoon unsalted butter
  • 1 tablespoon water
  • 1 14 ounce can COLD full-fat coconut milk (refrigerated overnight)

Instructions
 

  • Start by preparing the strawberries. Take each strawberry and slice the leaves off, then use a paring knife to carefully carve out the inside, leaving a generous hole in the center. This creates the perfect vessel for your mousse. Slice the bottom off the pointy end just enough so the berry can sit up straight. Once you’ve cored all the strawberries, place them on a plate.
  • Next, prepare the chocolate filling. In a microwave-safe bowl, combine the chocolate, water, and butter. Microwave the mixture on 50 percent power for 30 seconds at a time, stirring in-between until the chocolate begins to melt. You want it to be melty and smooth, so take your time with this step. Once melted, let the mixture cool for about 10 minutes.
  • Now, it’s time to whip the coconut. Retrieve the can of coconut milk from the fridge. Carefully open the can and discard the liquid (save it for smoothies!). Scoop the thickened coconut cream into the bowl of your electric mixer. Beat on medium-high speed until the coconut becomes light and fluffy.
  • Once the coconut cream is whipped, fold it gently into the cooled chocolate mixture. Use a spatula to incorporate the two until they’re well combined and there are no lumps. Take care not to deflate the mixture, as you want to maintain that light texture.
  • Transfer the chocolate mousse into a piping bag—though a spoon works just as well if you don't have one. Pipe the chocolate mousse into each prepared strawberry until overflowing. This looks fantastic and makes each bite a delightful surprise!
  • Finish off your strawberries by sprinkling them with colorful sprinkles if desired. This adds a fun, festive touch that’s perfect for parties!
  • Finally, refrigerate the filled strawberries until you’re ready to serve. This will help the mousse set up slightly and keep everything chilled and refreshing.

Notes

Leftover filled strawberries can be stored in an airtight container in the fridge. They’re best enjoyed within a couple of days to maintain the freshness of the strawberries.
