  • 1.5 pounds chicken thighs bone-in, skin-on
  • 1.5 pounds potatoes peeled and cut into 1-inch pieces
  • 1/4 cup olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • Salt to taste
  • Black pepper to taste

  • Preheat your oven to 400°F. This temperature will ensure your chicken gets crispy and golden while keeping the potatoes tender.
  • In a large mixing bowl, combine olive oil, garlic powder, dried rosemary, dried thyme, salt, and black pepper. This mixture is the flavor base for your dish.
