Ingredients
  

  • 8 ounces cream cheese at room temperature
  • ¼ cup breadcrumbs
  • ¼ cup hot sauce
  • ½ red bell pepper chopped
  • ½ green bell pepper chopped
  • 1 jalapeno pepper chopped
  • 3 large tortillas I used ancient grain whole wheat tortillas
  • 1 cup cheddar cheese shredded

  • Start by preheating your oven to 350℉. This ensures that your Antojitos will bake evenly and reach that perfect golden-brown color. While the oven warms up, line a baking sheet with parchment paper for easy cleanup.
  • In a medium bowl, add the cream cheese, breadcrumbs, and hot sauce. Using a fork, mix these together until the cream cheese has softened and the ingredients are well combined. Look for a smooth texture with a hint of spice.
  • Next, add in the chopped red bell pepper, green bell pepper, and jalapeno pepper into the mixture. Stir them in well so that every bite will be packed with flavor. The peppers should add a nice crunch to the creamy base.
  • Take the tortillas and spread about ⅓ of the cream cheese mixture over each one. Ensure an even layer, spreading it all the way to the edges. Follow this by sprinkling ⅓ of the cheddar cheese on each tortilla. The combination of the filling and cheese should be generous.
  • Carefully roll up each tortilla tightly. Aim for a snug roll, ensuring that none of the filling escapes. Once rolled, cut each tortilla into 1 inch slices. This will make them easy to eat and allow the melted cheese to shine.
  • Place the slices on the prepared baking sheet, ensuring they are spaced out to allow for even cooking. You'll want them to bake to a delightful crispness.
  • Now, it’s time to bake! Place the baking sheet in the preheated oven and bake at 350℉ for about 10 minutes. This gives the cheese time to melt and the tortillas to crisp up just right.
  • After 10 minutes, turn on the broiler. Let them broil for an additional 3 minutes to achieve that golden-brown color on top. Keep a careful eye on them to prevent burning!
  • Once done, remove from the oven and let them cool slightly before serving. Pair them with your favorite salsa or sour cream for an extra burst of flavor. Enjoy!

Notes

Leftover Antojitos can be stored in an airtight container in the refrigerator for up to three days. Just reheat in the oven to restore their crispiness.
You can freeze unbaked Antojitos for up to a month. Simply prepare them, place them on a baking sheet, freeze until solid, then transfer to a freezer bag. Bake directly from frozen, adding a few extra minutes to the cooking time.
They pair wonderfully with sides like guacamole or a refreshing salad to balance the richness of the Antojitos.
