Start by washing the zucchini thoroughly under running water. Once clean, slice the zucchini into coins, aiming for even thickness so they cook uniformly.
In a large mixing bowl, add the sliced zucchini, olive oil, salt, and pepper. Use your hands to toss everything together until each piece of zucchini is well coated.
Preheat your air fryer to 200C/400F. This preheating step ensures that the zucchini starts cooking immediately.
