  • 2 large Zucchini sliced into coins
  • 1 tablespoon Olive Oil
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Pepper

Instructions
 

  • Start by washing the zucchini thoroughly under running water. Once clean, slice the zucchini into coins, aiming for even thickness so they cook uniformly.
  • In a large mixing bowl, add the sliced zucchini, olive oil, salt, and pepper. Use your hands to toss everything together until each piece of zucchini is well coated.
  • Preheat your air fryer to 200C/400F. This preheating step ensures that the zucchini starts cooking immediately.
  • Once the air fryer is ready, transfer the zucchini mixture into the air fryer basket in a single layer.
  • Set the timer for 10 minutes. Pause the air fryer every three minutes to shake the basket for even cooking.
  • When the timer goes off, carefully remove the basket. The zucchini should be golden brown and crispy. Adjust cooking time for desired crispiness.
  • Transfer the cooked zucchini to a serving plate and enjoy immediately while still warm.

Notes

  • Storage: Leftover zucchini can be stored in the refrigerator, covered. It will keep well for up to five days.
  • Freezing: Place leftover zucchini in a shallow container and store it in the freezer for up to two months.
  • Reheating: If the pre-frozen zucchini has been thawed (or previously refrigerated), you can add it to the air fryer basket and reheat at 200C/400F for four minutes, flipping halfway through.
