Equipment

  • Air Fryer
  • Chef's Knife
  • Skillet

Ingredients

  • 28-inch tortillas Flour
  • 2 tablespoons Salsa
  • 1/4 cup Mozzarella Cheese
  • 1/4 cup Mexican Cheese
  • 1/4 cup Chicken Breast (pre-cooked and chopped)
  • 1/4 small Bell Pepper (chopped)
  • 1/8 small Red Onion (finely chopped)
  • 1/2 tablespoon Butter (melted)

Instructions

  • Preheat your air fryer to 200C/400F for about 5 minutes. This step is crucial as it ensures even cooking and crispiness.
  • While the air fryer heats up, lay two flour tortillas on a clean surface. This makes it easy to layer your ingredients.
  • On the left side of one tortilla, spread salsa. This will provide a delightful flavor base for your quesadilla.
  • On the right side of that same tortilla, sprinkle mozzarella cheese, Mexican cheese, chicken, bell peppers, and onions. Make sure to layer generously for maximum flavor!
  • Now, take the tortilla with the salsa and place it on top of the filled tortilla. Press down firmly to ensure everything sticks together.
  • Next, brush the tops of the stacked tortilla with melted butter. This will help them achieve that golden crust we all love.
  • Carefully place the quesadilla in the air fryer basket. Ensure it lays flat for an even cook. Cook for about 4 to 5 minutes, or until the tortilla is lightly golden brown.
  • Once done, remove the quesadilla from the air fryer basket using tongs, as it will be hot. Allow it to cool for a minute.
  • Finally, cut the quesadilla into four portions. Serve immediately with extra salsa or guacamole if desired!

Notes

  • Storage: Store leftover quesadillas in airtight containers in the refrigerator for 3 to 4 days.
  • Freezing: Transfer leftovers to a freezer-safe container and freeze for up to three months.
  • Reheating: Reheat in the air fryer or a non-stick skillet. Avoid microwaving as it can make them soggy.
  • Serving Suggestions: Pair with fresh guacamole, sour cream, or a zesty salad to enhance flavors.
  • Experiment with Cheese: Try different cheese blends to find your favorite combination!
  • Add Herbs: Fresh cilantro or green onions can add a nice touch of flavor.
