Directions for Instant Pot Chicken Tortilla Soup

Instant Pot Chicken Tortilla Soup

Making this Instant Pot Chicken Tortilla Soup is truly a simple process that yields amazing results! Follow these steps, and you’ll be enjoying a hearty bowl in no time!

  1. Start by placing the chicken breasts into your pressure cooker. It’s best to use boneless, skinless options for ease of shredding later. The chicken forms the heart of the soup, so make sure you have enough for the servings you desire.
  2. Next, add in the green bell pepper, onion, zucchini, corn, and both the kidney and black beans. These vegetables not only enhance the flavor but also provide a colorful presentation. Make sure the veggies are chopped into bite-sized pieces so they blend perfectly.
  3. Now, pour in the chicken broth along with the chunky salsa and diced tomatoes. The broth is essential for cooking the chicken and bringing all the flavors together. Stir gently to ensure that everything is well combined.
  4. Sprinkle in the chili powder, cumin, smoked paprika, crushed red pepper, salt, and pepper. These spices are what give the soup its warm, inviting flavor. Stir again to ensure the spices are evenly distributed.
  5. Close the Instant Pot lid and lock it in place. Set the steam release valve to “sealing” and select the pressure cooking setting for 10 minutes. It’s amazing how quickly the Instant Pot cooks everything to perfection!
  6. Once the cooking time is complete, allow for a manual release of about 5 minutes. After that, perform a quick release to release any remaining steam. This method helps to keep the chicken juicy and tender.
  7. After releasing the pressure, carefully open the lid. Use a meat thermometer to ensure the chicken has reached an internal temperature of 165°F. If it’s safe, remove the chicken breasts from the pot and place them on a cutting board.
  8. Using two forks or your hands, shred the chicken into bite-sized pieces. Returning the shredded chicken back into the pot adds texture and flavor back into the soup.
  9. Add the juice of half a lime into the soup and stir well. This will brighten the flavors and give the soup a fresh twist. Finally, toss in the cilantro and give it another gentle stir.
  10. Serve the Instant Pot Chicken Tortilla Soup hot, with your favorite toppings like avocado, cheese, or crispy tortilla strips. Enjoy your comforting bowl of goodness!

Notes

This soup can be made super thick and chunky or more on the broth side. Add about 2 cups of broth for thick and closer to 4 if you prefer yours much more broth based. It varies for me depending on my mood. Spice level can certainly be adjusted for this one. I typically have to play it safe for the little guy and then add all of the spice for Anthony and myself. You can play around with the type of salsa you use, adding more crushed red pepper, or changing up the paprika for smoked paprika (a MUST in my opinion!). So essentially you never have to make the same version twice!
